The 1984 grape harvest was one of the earliest on record due to a warm spring and a long, dry summer. Since Cabernet Sauvignon is among the last grapes harvested, these warm days and cool nights were ideal during ripening. This wine is the first from our own vineyards in the Napa Valley After compleion of fermentation and charification the wine was aged for one year in small 60 gallon French oak barrels. This wine's 0.69 rotal acid (g/100ml), 3.32pH, and 12.4% alcohol (% by volume) combine with a cherry, chocolate aroma and a subtle french vanilla bouquet to produce a compler Cabernet sauvignon. It is an excellent accompaniment to beef, lamb and wild game and the tannins shoul a allow the wine to improve with ten to twenty years of bottles age.
